　　有一個名叫丁的廚師替梁惠王宰牛，手所接觸的地方，肩所靠著的地方，腳所踩著的地方，膝所頂著的地方，都發出皮骨相離聲，刀子刺進去時響聲更大，這些聲音沒有不合乎音律的。它竟然同《桑林》、《經首》兩首樂曲伴奏的舞蹈節奏合拍。

　　梁惠王說：“嘻!好啊!你的`技術怎么會高明到這種程度呢?”

　　庖丁放下刀子回答說：“臣下所探究的是事物的規律，這已經超過了對于宰牛技術的追求。當初我剛開始宰牛的時候，(對于牛體的結構還不了解)，無非看見的只是整頭的牛。三年之后，(見到的是牛的內部肌理筋骨)，再也看不見整頭的牛了。現在宰牛的時候，臣下只是用精神去接觸牛的身體就可以了，而不必用眼睛去看，就象視覺停止活動了而全憑精神意愿在活動。順著牛體的肌理結構，劈開筋骨間大的空隙，沿著骨節間的空穴使刀，都是依順著牛體本來的結構。宰牛的刀從來沒有碰過經絡相連的地方、緊附在骨頭上的肌肉和肌肉聚結的地方，更何況股部的大骨呢?技術高明的廚工每年換一把刀，是因為他們用刀子去割肉。技術一般的廚工每月換一把刀，是因為他們用刀子去砍骨頭。現在臣下的這把刀已用了十九年了，宰牛數千頭，而刀口卻像剛從磨刀石上磨出來的一樣。牛身上的骨節是有空隙的，可是刀刃卻并不厚，用這樣薄的刀刃刺入有空隙的骨節，那么在運轉刀刃時一定寬綽而有余地了，因此用了十九年而刀刃仍像剛從磨刀石上磨出來一樣。雖然如此，可是每當碰上筋骨交錯的地方，我一見那里難以下刀，就十分警懼而小心翼翼，目光集中，動作放慢。刀子輕輕地動一下，嘩啦一聲骨肉就已經分離，像一堆泥土散落在地上了。我提起刀站著，為這一成功而得意地四下環顧，一副悠然自得、心滿意足的樣子。拭好了刀把它收藏起來。”

　　梁惠王說：“好啊!我聽了庖丁的話，學到了養生之道啊。”
